Rice with Chicken
Arroz con Pollo is a classic dish that combines delicious chicken and rice flavors in a single cooking.
Ingredients:
- 500 g chicken breast, cut into cubes
- 2 cups of rice
- 1 large onion, chopped
- 1 red bell pepper, diced
- 1 cup peas
- 3 cloves garlic, minced
- 1/2 teaspoon turmeric or saffron
- 4 cups chicken broth
- Olive oil
- Salt and pepper to taste
Preparation:
- In a large saucepan, heat the oil and fry the chicken until golden brown. Set aside.
- In the same pot, add the onion, pepper and garlic. Cook until tender.
- Add the rice and stir well to absorb the flavors.
- Add the chicken, turmeric, peas and chicken broth. Stir and bring to a boil.
- Reduce heat, cover and cook until rice is tender and liquid has been absorbed.
- Serve hot and enjoy.
